This Red & Yellow Caturra is one of the top coffees produced at El Vergel, located in the micro-lot next to the washing area, and surrounded by Guava trees, this coffee profile is one of the most intense and fruity coffees developed by the estate. Planted in 2016 & 2018 with a quantity of over 40,000 plants, this batch has been one of the estate’s best to experiment with processing larger batches. Processed with a unique method on the estate which consists of a special anaerobic fermentation in 2 steps to develop a more intense but clean profile, to showcase all the properties of the variety combined with flavours unique to the process, which is then sun dried for 15 to 25 days

This coffee was processed through an anaerobic controlled temperature fermentation for 48 to 60 hours where ph levels were closely monitored, followed by an intermittent drying process of a series of stalls at different moisture levels to increase complexity, and finished in silos to obtain an accurate moisture content of the beans, and then stabilised for 45 days to homogenise the beans and increase the complexity of the profile
