This farm is owned by a South Korean immigrant family, home of 2023 World Barista Champion Boram Um. To make their coffees more unique they experimented growing exotic varieties. Their Catucai (Catuai – Icatu hybrid) trees thrive in a forest canopy volcanic soil area named Espirito Santo. The ripe cherries are hand-picked, depulped, and then placed on beds to dry. Also known as honey processing. This meticulous journey through terroir and processing results in a green apple-fresh, caramel-like coffee.
