COSTA RICA — DON ALEXIS
This coffee comes from the Don Alexis estate, situated among the mountains near the Irazú volcano, and is one of their top offerings. It’s processed using a unique natural thermic aerobic fermentation process, which produces a more complex but clean flavour profile. After harvesting, the beans undergo a 4 day aerobic fermentation inside the greenhouse, followed by a 30 day sun drying process. Once processed, the coffee is stored in parchment until ready for export. The end result is a bright and fruity flavour profile that’s ideal for both espresso and filter coffee
